ingredients for the strawberry syrup
- 1 cup fresh strawberries, sliced
- 1 cup water
- ¾ cup sugar

- Combine the water and sugar in a saucepan and heat until simmering and all the sugar has dissolved.
- Place sliced strawberries in a mason jar or glass bowl.
- Gently pour the hot sugar water over the strawberries. Cover and let steep until cool.
- Once cooled, place all ingredients in a blender and puree until smooth. Run through a sieve to remove any fruit pulp. Store in the fridge until ready to use.
To assemble the soda floats
- Divide the cup of strawberry syrup into 4 ¼ cups. Divide the gelato into four ½ cup servings.
- Place 2 tbsp of strawberry syrup in the bottom of each glass, then add ¼ cup of ice cream (half the divided portion) on top of the syrup
- Add the remaining two tablespoons of syrup to each glass. Top with club soda until nearly full. Gently stir to combine soda and syrup. Add the last ¼ cup of gelato to each cup (this will 'float' on top) and top with whipped cream and a strawberry.
